Having spent the summer selling ice cream from Penelope’s Pop Up Ice Cream Parlour, Carly Tomlinson is now serving hearty British food from Penelope’s Kitchen in Spinningfields, Manchester. Penelope’s Kitchen’s ethos is to source all ingredients from independent Manchester suppliers in order to support local trade.
Carly, a Mancunian who lives in Blackley, said living in New York a few years ago gave her the confidence and enthusiasm to launch her venture. “After working in radio for a while, I decided I wanted a change, so I trotted off to New York for what was meant to be three months, but turned into three years. As soon as I arrived in New York, I thankfully landed on my feet. I got jobs working in the hotel industry, managing bars and working in catering. I got to meet and work with some amazing people who taught me to have a passion for food and life. While there, I used to go to a café called Penelope’s, where I would dream about launching my own catering business.”
